Holiday Fun with Marshmallow Fluff


Some nights you just need a special treat! For us, a night of playing with Legos and listening to Harry Potter and the Sorcerer’s Stone was such an occasion. Fortunately, a magical substance that goes by the name of Marshmallow Fluff is actually a thing! !t is extremely easy to make and is super GAPS friendly!


With just a stand-up mixer, water, honey, vanilla and gelatin you can create this fascinating dessert. We decided to add a drop of peppermint essential oil to our batch for extra holiday flavor!


I first learned of Marshmallow Fluff from the GAPS practitioner Becky Plotner’s blog Nourishing Plot.

Vanilla Bean Marshmallow fluff

  • 1 C Water
  • 3 T Gelatin
  • 1/3 C Honey
  • 1 Vanilla Bean 


  1. Put 1/2 cup water in the bowl of your mixer.
  2. Sprinkle gelatin into water to allow to bloom.
  3. Put the other 1/2 cup of water in a small pan.
  4. Add in honey and allow to simmer.
  5. Simmer until mixture is boiling for around  10 minutes or the temperature has reached around 240 degrees.
  6. Turn on mixer to level 4.
  7. Slowly pour in honey/water mixture- mixing it in with the gelatin and water
  8. Turn mixer to high.
  9. As it continues to mix, scrape the insides of the vanilla bean and add into the mixing bowl.
  10. Continue to mix for around 10 minutes. In this time it will grow in size, become very light in color and fluffy.
  11. You can enjoy the marshmallow fluff immediately or you can put into a piping bag or ziplock bag to make shapes
  12. Enjoy!
