One of the most frequent questions I get asked, ever since I started eating an AIP diet (Auto Immune Paleo Diet) almost 5 years ago, is “What do you do for breakfast?!” Let’s be real, it is hard to come up with something that feels truly breakfasty some times when you are on an elimination type diet, but I find your lack of faith disturbing.
There are days that my craving for a diner style breakfast is strong my friends! A few days ago all I really wanted was some hashbrowns, but sadly potatoes are still not an option for me. That was not going to stop me from enjoying hash browns, so I went to the fridge to see if there was anything else I could use as a potato substitute. I found some spaghetti squash already cooked up and an idea was born.

As you can see these are quick and easy! They are great served alongside any of your favorite breakfast items or topped with sausage and gravy for a hearty meal that can be enjoyed any time of the day! A side of blue milk is optional.

LOVE it! I can’t wait to try these. Unfortunately I react badly to cauliflower which means I can’t enjoy your Gravy recipe but I’ll definitely try these.
