Spaghetti Squash “Hash Browns”

One of the most frequent questions I get asked, ever since I started eating an AIP diet (Auto Immune Paleo Diet) almost 5 years ago, is “What do you do for breakfast?!” Let’s be real, it is hard to come up with something that feels truly breakfasty some times when you are on an elimination type diet, but I find your lack of faith disturbing.


There are days that my craving for a diner style breakfast is strong my friends! A few days ago all I really wanted was some hashbrowns, but sadly potatoes are still not an option for me. That was not going to stop me from enjoying hash browns, so I went to the fridge to see if there was anything else I could use as a potato substitute. I found some spaghetti squash already cooked up and an idea was born.

  • 1 large Spaghetti Squash – cooked
  • Fat of your choice to fry with – tallow, lard, coconut oil, olive oil, etc 
  • Salt and Pepper


  1. Scoop spaghetti squash out into a clean dish towel (yes I said dish towel)
  2. Ring the dish towel in order to squeeze all the moisture out from the squash
  3. Open up towel and remove squash
  4. Make small patties with the squash
  5. Heat up your frying pan with a healthy amount of oil to fry in
  6. Place your patties in 4-5 at a time and allow to fry on both sides
  7. Pull them out when they are golden brown and crispy on both sides
  8. Sprinkle with salt and pepper to taste
  9. Enjoy!


As you can see these are quick and easy! They are great served alongside any of your favorite breakfast items or topped with sausage and gravy for a hearty meal that can be enjoyed any time of the day! A side of blue milk is optional.
