Vanilla Bean Marshmallows & Hot Chocolate Round Up


We are all about the day of love over here, but it has never been an especially romantic affair. Valentine’s day is yet another opportunity to show each other, our littles, our family, and friends a little extra love. In our home that usually involves treats!

When looking for something we can all enjoy I am faced with the toughest of challenges. My Little Bears diet is the most limiting- without coconut, dairy or nuts it seems almost impossible. But we have found something we all love and can enjoy!

Vanilla Bean Marshmallows

  • Servings: 6

  • 1 C Water
  • 3 T Gelatin
  • 1/3 C Honey
  • 1 Vanilla Bean
  • 1 pinch Salt


  1. Put 1/2 cup water in the bowl of your mixer.
  2. Sprinkle gelatin into water to allow to bloom.
  3. Put the other 1/2 cup of water in a small pan.
  4. Add in honey and allow to simmer.
  5. Simmer until mixture is boiling for around  10 minutes or the temperature has reached around 240 degrees.
  6. Turn on mixer to level 4.
  7. Slowly pour in honey/water mixture- mixing it in with the gelatin and water
  8. Turn mixer to high.
  9. As it continues to mix, scrape the insides of the vanilla bean and add into the mixing bowl.
  10. Continue to mix for around 10 minutes. In this time it will grow in size, become very light in color and fluffy.
  11. Pour into a parchment lined 8×8 glass pan. (I use this)
  12. Allow to cool for a couple hours.
  13. When cutting up the marshmallows you can leave as is or if you do not have dietary restrictions you can coat them in cacao powder or coconut powder.
  14. Enjoy!

You can also enjoy the marshmallow fluff immediately or you can put into a piping bag or ziplock bag to make shapes.
