My First GAPS Soup: A 30 Minute Meal

This was the first GAPS meal I ever made when we tried going through intro for the first time four years ago. Back then I didn’t understand exactly how the diet worked and we were unsuccessful at seeing it through, but the soup was awesome. When we started GAPS again for the second time I quickly realized how valuable this “recipe” was whether I was in a time crunch, not feeling great or just did not want to have to do a ton of prep work.


Quick and Easy GAPS soup

  • 8 cups Stock (You want a well-flavored stock. Here is our current favorite.)
  • 2 packages cubed Butternut Squash
  • 1 regular sized (around 4oz) clam shell of Greens (we love baby kale or chard)
  • 1 lb Ground Meat
  • 1 bunch Parsley (omit if stage 1)
  • Salt to taste


  1. Pour stock into a pot and turn on medium heat
  2. Mix 1 lb ground meat, 1/4 cup finely chopped parsley, and salt
  3. Roll into small meatballs and add them to the stock
  4. Add to the pot the butternut squash
  5. Continue to simmer
  6. 15 minutes later add in greens
  7. Once the greens are cooked remove pot from heat.
  8. Add salt to taste
  9. Enjoy!

Now this recipe is so simple it is almost too easy to even call it a recipe, but it is delicious and anytime you find a real-foods meal that takes 30 minutes from start to finish is a winner in by book! I hope you enjoy!
