Redeeming Kale: Salad Made 2 Ways

I know, I know, kale really can be pretty gross. It is tough, bland when raw and slimy when cooked. For some, it is really difficult to find its appeal. But here is the thing: it is amazing for you AND can be super delicious when made right! So before you give up on kale completely maybe I can entice you to try it one last time. Wondering what is so great about kale?

Here are just some of its many benefits:

  • High in fiber
  • Provides A, B, C, K, and calcium along with a ton of other vitamins
  • Has alpha-linolenic acid- a great alternative source for Omega 3s fatty acids
  • It helps nearly every system in your body! (For more info read this!)
  • 1 cup provides you with 33 grams of protein

I love making salads for my family, especially when the produce is fresh. I especially love making a huge batch of kale salad because, unlike most other types of salad, it gets better with “age”. Since kale is so hearty, allowing it to sit in a dressing for a day or two helps it to soften. Basically, kale likes to marinade. The beautiful thing about that is I can make a huge salad and serve it up in various ways over the next few days making meals a whole lot easier!

Cranberry Kale Salad w/ dijon vinaigrette

  • Servings: 6
  • Difficulty: easy

Ingredients

  • 1 large bunch Kale (we prefer Lacinato kale for this recipe)
  • 1/2 cup Dried Cranberries (we love the apple juice sweetened ones)
  • 1/2 cup Sunflower Seeds
  • 1/2 cup Red Onion (we love red onion, but you can do less if your kids don’t)
  • 1/2 cup grated Parmesan Cheese (optional)
  • 1 cup Olive Oil
  • 3 tbs Dijon Mustard
  • 1 Lemon- juiced
  • Salt and Pepper to taste

Directions

  1. Wash and roughly chop kale. Place in bowl.
  2. Finely chop red onion. Add to salad.
  3. Add in the dried cranberries and sunflower seeds.
  4. In a small mason jar put in the olive oil, dijon mustard, lemon juice, salt, and pepper.
  5. Screw the mason jar lid on tightly and shake, shake, shake! Or use a whisk or immersion blender if you prefer.
  6. Add as much dressing as you like on the salad. Mix thoroughly.
  7. Grate in the Parmesan cheese.
  8. Allow the salad to rest for at least an hour but preferably a day.
  9. Enjoy!

Apple Carrot Kale Salad w/ honey dijon vinaigrette

  • Servings: 6
  • Difficulty: easy

Ingredients

  • 1 large bunch Kale (we prefer a curly leafed kale for this recipe)
  • 1cup shredded Carrot
  • 1 cup shredded or finely diced Apple (red or green depending on taste)
  • 1/2 cup sliced Almonds
  • 1 cup Olive Oil
  • 3 tbs Dijon Mustard (or even better- fermented mustard)
  • 1 Lime- juiced
  • 1 tbs Raw Honey
  • Salt and Pepper to taste

Directions

  1. Wash and roughly chop kale. Place in bowl.
  2. Add in the shredded carrots, apple, and sliced almonds.
  3. In a small mason jar put in the olive oil, dijon mustard, lime juice, honey salt, and pepper.
  4. Screw the mason jar lid on tightly and shake, shake, shake! Or use a whisk or immersion blender if you prefer.
  5. Add as much dressing as you like on the salad. Mix thoroughly.
  6. Allow the salad to rest for at least an hour but preferably a day.
  7. Enjoy!
